Javier Sanz - Sauvignon Blanc
Javier Sanz - Sauvignon Blanc
Viticulture:
The variety was brought to the area more than 40 years ago, from France. The vines are located in the Camino Realy area, due to its characteristics, both cluster and vine type, it adapted exceptionally to stony terroirs. It has a short vegetative period and has small, pentagonal leaves, small, very compact clusters, and elliptical berries.
Elaboration:
The harvest is carried out mechanically, at night and with an integrated destemmer, at its optimal moment of maturation. The production is meticulous, with cryomaceration, must clarified by gravity for one day. Fermentation at a temperature below 15ºC in stainless steel tank. Slow fermentation to preserve the maximum aromas and aging on its fine lees for 2 months.
CATA's notes:
Pale yellow in color with greenish flashes. Characteristic varietal aromas such as lime, grass and white flowers. On the other hand we find hints of stone fruit and hydrocarbon. It also shows notes of tropical fruit, such as pineapple and passion fruit. In the mouth, it shows an acidity that increases the sensation of freshness and accentuates its citrus and tropical flavors. Medium bodied, it is fresh. It leaves a pleasant floral and mineral memory on the palate.
