Fincas de Azabache - Garnacha
ELABORATION
This wine is made with a special selection of old vines located in the Yerga mountain range of the Garnacha variety.
We wanted to make known all the potential that this variety has, together with our terroir.
The grapes are harvested between the last week of September and the first fortnight of October, when the grapes have reached the optimal point of phenolic ripening.
Alcoholic fermentation takes place in Ac tanks. Stainless at a controlled temperature between 26-28ºC with automatic control of pumping over, in this way we achieve more uniformity during fermentation and a much smoother and more complete extraction of aromatic and color compounds.
Twelve months in French and American oak barrels. Six months in the bottle.
TASTING:
COLOR - The first thing that stands out is its high-intensity purple-red color, with very bright reflections and ruby iridescence.
SCENT - On the nose, aromas of red fruit jam, melon and a citrus touch of mandarin stand out, highly concentrated in intensity, balanced with soft balsamic touches of coffee and toast provided by the barrel.
TASTE - Jam of red and black fruits (blackberry, strawberry, raspberry), very well integrated with balsamic, vanilla and roasted notes provided by the wood.
AFTERTASTE - The finish is very long, sweet, glyceric and mineral, despite its great concentration and high alcohol content, it is a very fine wine with good balance.
GASTRONOMIC RECOMMENDATION
It goes very well with sirloins, red meats, steaks, snails and all types of cheeses, and it can also be a good companion to desserts.
