Viticulture:
The Verdejo grapes used to make this wine come from Pago Familiar Villa Narcisa, in La Seca. They are the result of the most personal selection of Javier Sanz. 45 hectares more than 40 years old, with pebble soil on the surface and clay subsoil, factors that give the wine a mineral touch.
Elaboration:
The harvest is mechanical at night, with an integrated and manual destemmer. During fermentation, rigorous temperature control is followed to preserve the aromatic characteristics of this wine as much as possible. Fermentation at a temperature below 15ºC; in stainless steel tank. Slow fermentation to preserve the fruit aromas as much as possible. Aged on its own lees for 3 months before bottling.
CATA's notes:
Bright in the glass, with slight greenish reflections. Its fresh aromas are reminiscent of sweet grapefruit and show light notes of anise and fennel. On the palate it is dry, with a medium body and refreshing acidity. Perfect to drink at any time.
